Gluten-Free Hush Puppies Recipe

This recipe works well with variations. While white rice flour makes traditional hush puppies, whole grain gluten-free flours (like brown rice flour or sorghum flour) can be used. The resulting hush puppies are slightly denser and fry up a little darker.

Dry Mix

Gluten-free cornmeal
1 cup
White rice flour
34 cup
Granulated sugar
3 tbsp
Baking powder
2 tsp
Seasoned salt regular salt
1 tsp
Baking soda
12 tsp
Chipotle powder
12 tsp
Xanthan gum
14 tsp

In a medium bowl, whisk together cornmeal, white rice flour, granulated sugar, baking powder, salt, baking soda, chipotle powder (if using), and xanthan gum.

Wet Mix

Onion powder
finely chopped
12 tsp
Garlic powder
minced
12 tsp
Milk
12 cup
Egg
beaten
1 unit

In a medium bowl, whisk together onion, garlic, milk, and egg.

Batter

Prepared dry mix
1 batch
Prepared wet mix
1 batch

Pour wet ingredients into dry ingredients and stir together until smooth but some lumps remain.

Frying

Vegetable oil

Heat oil in a Dutch oven overhighheat to350°Fand adjust flame to maintain temperature.

Line a rimmed baking sheet with paper towels.

Drop batter, about[1 scant tablespoon]at a time, into hot oil until you have a dozen hush puppies.

Fry until deep golden brown, about, turning occasionally.

Remove hush puppies from the oil with a skimmer.

Transfer to prepared baking sheet.

Repeat with remaining batter.
