Banana Nut Bread

The key to making this banana bread is using a blend of spices to amplify the banana flavor, along with a few other tricks to keep the crumb moist and tender.

Banana mash

Bananas
peeled, ripe, not black

Mash the banana with greek yogurt, eggs and vanilla in a medium bowl

If the bananas arent ripe, allow for the mixture to sit for up toto ripen chemically.

Combine flour, sugar, oat flour, baking powder, baking soda, salt, cinnamon, cloves, nutmeg in the bowl of a stand mixer fitted with a paddle attachment

Roughly mix until the dry mixture is homogonized.

Add coconut oil and mix on low until coconut oil disappears into a mealy powder.

Preheat the oven to350F

Add banana mash into the dry mixture and continue mixing only until the floury bits disappear.

Fold in nuts with a flexible spatula, scrape into prepared pan(s), and spread into an even layer.

Bake until well risen and golden brown, or to an internal temperature of around200°F, aboutfor a large loaf orfor small.
